Green Chili Stew

Green Chili Stew:
If you can get fresh roasted green chilis then they are the best but frozen chopped chilis work well also. Add an extra 1/2 cup of water if you are using fresh roasted chilis.

1 lb of ground beef or ground pork
1 lb of chopped meat, beef or pork
1 medium size onion (diced)
1 16oz can of stewed tomatoes (squish them up good)
1 can of pinto beans
1 can of black beans
1 can of kidney beans
2 pints of chopped roasted green chilis (one hot and one mild)
1 tsp salt
1/4 tsp cumin
1/4 tsp oregano
1/4 tsp pepper
1 minced clove of garlic
1 cup of water

In a frying pan combine and brown meat, 1/2 clove minced garlic and 1/2 cup water.
In a large pot add everything else. Make sure you add the juice from the stewed tomatoes and beans. Add the chilis still frozen.
Once the meat is ready add this to the mix.

Simmer over medium heat for four hours and serve hot in a bowl with warm buttered tortillas for dipping or with cornbread. Sprinkle some grated cheddar cheese on top if you like.
Feeds about 6-8 and tastes great as leftovers.
