Rib-Eyes with Rub and Blue Cheese, potatoes and mushrooms on charcoal grill

Prep time: 15 minutes. About 1 hour to grill.

I've made this once twice now (made it tonight for mothers day!), works well with both Sirloin and Ribeye Steak.

Steaks: about 1-1.5" thick, remove excessive fat.
Blue Cheese: get your favorite kind (mine is Maytag blue cheese, absolutely wonderful stuff)

Rub: (this is enough for 6 pounds of meat, adjust to what you're cooking)
  • 4 teaspoons of coarse salt
  • 1 tablespoon freshly ground black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon minced garlic
Prepare the rub by mixing all the ingredients above together. Cover the steaks with a little bit of olive oil, then cover with the rub. Let sit 20-30 min at room temperature before grilling.

Mushrooms: in an aluminum dish, put the mushrooms and add some au-jus sauce. Cover with foil.
Potatoes: get some good fresh ones, wash the skin and cover with aluminum foil.

Get the grill going. (high heat) Cover half the surface with charcoal, leave the other half bare so you can move stuff around if it gets too hot.

Put the potatoes on first. After half an hour, put the mushrooms on.

After 40-45 minutes, put the steaks on the grill, right over direct high heat. After 8 minutes turn/move the steaks for medium/medium rare done and cook for 8 more minutes.

Remove from the grill. Put the steaks on a dish. Before covering them loosely with aluminum foil, put the blue cheese on top. Leave sitting covered for 3-5 minutes (they will continue to "cook" during that period) to let the blue cheese melt.
