Any chicken on the grill ideas?

Think the charcoal grill is gonna cook some chicken this weekend.

Any thoughts? I will post some of mine

soak it in olive oil and put some rotisserie (Sp?) seasoning on it . oh and soak it in that olive oil/seasoning mixture for an hour in a zip lock freezer bag.

marinade: 1 bottle zesty Italian salad dressing
1/3 cup of lemon juice
1/3 cup honey
1/4 cup Worcestershire sauce
2 teaspoons paprika
3-4 pounds of chicken

Blend all ingredient's together, Reserve 1/4 cup of marinade for basting while you cook, then pour over chicken cover and refrigerate for at least 1 hour. Turn chicken in marinade to make sure all chicken gets covered. Then using heavy duty aluminum foil make a pouch, pour chicken and marinade into the pouch and cook over medium grill heat for about 20 min. I usually use 2 sheets of foil on bottom add chicken mix and then add 2 more pieces to the top and fold the edges together so the marinade does not leak out while cooking. Cook for 10 min and turn over for the other 10 grill lid closed. Remove pouch from grill cut open and then cook the chicken until done on the open grill basting with the reserved marinade.

I suppose you could use those foil pouches they make, but I have never tried them. Enjoy

Here is a quick one, more suited for week night grilling than weekend grilling.

2 Tbs Honey
1 Tbs Hoison Suace (Orential Section)
2 Tbs Orange Juice.

Mix together and glaze/baste.

Thanks for the input.

Leaning towards the ol' chicken on a beer can idea. I know you only need one can but I usually end up with several of them.....

Rub:
- 1 teaspoon dry mustard
- 1 teaspoon granulated onion
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon chopped garlic
- 1/2 teaspoon coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground black pepper

And of course:
- 1 can of beer
- 1 whole chicken
- BBQ sauce

Combine all the rub ingredients together in a bowl.
Take all the stuff out of the chicken (neck, giblets, etc). Rinse the chicken inside and out and pat dry. Apply some vegetable oil to the chicken and and then cover the chicken with the rub.

Drink about 2/3 of the can of beer (this may take multiple attempts to get it right). Add your favorite BBQ sauce to the beer can so that it is about half full again.

"Sit" the chicken down on the beer can by sliding the can into the body cavity (no, not the side where the head was, the other end....). Make sure the can stays upright so you don't get any of the beer/bbq sauce into the chicken. Set the chicken upright on the grill with the legs around the side of the can for balance. Grill over medium INDIRECT heat till done. (1-1.5 hrs)

To make this easy, several hardware stores sell a metal holder contraption that you can put the beer can in with some support off the bottom to make sure the durn thing doesn't fall over (easy to do if it took you too many beer cans to get it just right).

Once done, remove the chicken from the grill and the can from the chicken, again making sure you don't spill any of the stuff from inside the can into the chicken. Discard (for real this time) the contents of the can.

ok.. stupid ? time. what does putting bbq sauce in the beer do? I can see the vapors from beer, but that is a liquid.. bbq sauce is more a solid, thus the fumes would be minimal at its boiling point I would imagine.

really interested in how much flavor this adds to the chicken when applied this way, bbq that is.

Not sure about that rs. Maybe it just make it smell better while you're cooking (cuz it sure makes my mouth water while grilling). I don't remember when I started doing this. Became I habit I guess....

I would imagine any of the lighter substances in the BBQ sauce would evaporate, while the rest of it just stays behind....

I like to drop whole cloves of garlic into the can. Adds a little punch. Also, I always stuff an onion in the neck opening so it holds the steam inside the chicken better. You'll find it's much juicier this way. You can use a potato too.
